El interés reciente en las proteínas vegetales, particularmente las derivadas del arroz, ha surgido debido a sus beneficios destacados en salud, coste y funcionalidad. Estas proteínas ofrecen una alternativa sostenible y renovable frente a las proteínas de origen animal, y se destacan por ser hipoalergénicas, hipocolesterolémicas y poseer propiedades antioxidantes y anticancerígenas, además de ser ricas en aminoácidos esenciales y más digestibles que otras proteínas de cereales como trigo, maíz y cebada. El desarrollo de aislados de proteínas de arroz (RPI) y su uso como ingredientes alimentarios es una tendencia importante. Sin embargo, estos aislados tienen limitaciones debido a su alto contenido de glutelina, lo que afecta su solubilidad y propiedades funcionales, especialmente cuando se obtienen mediante secado por aspersión a nivel industrial, lo cual induce agregación masiva y reduce aún más su solubilidad. Por otro lado, las proteínas son comúnmente utilizadas en la industria alimentaria como emulsionantes debido a su capacidad para formar películas interfaciales en emulsiones aceite en agua (O/W). La eficacia de estas proteínas como emulsionantes depende de factores como la solubilidad y la hidrofobicidad superficial. En este contexto, este trabajo se propuso mejorar la solubilidad y las propiedades emulsionantes de un RPI comercial mediante diferentes tratamientos combinados de cambios de pH, ultrasonido y calor. Se evaluaron diez muestras diferentes, incluyendo tratamientos individuales y combinados, buscando optimizar las condiciones que garantizaran una mejora significativa en la solubilidad para estabilizar emulsiones O/W. Los resultados indicaron que los tratamientos realizados a pH neutro no modificaron significativamente la solubilidad ni las características superficiales del RPI debido a la agregación y baja dispersabilidad observada bajo estas condiciones. Sin embargo, el tratamiento combinado de cambios de pH con ultrasonido y/o calor mostró una mejora significativa en la solubilidad de las proteínas, induciendo cambios en la estructura superficial y generando agregados de proteínas menos compactos y más dispersos. Específicamente, las muestras tratadas con la combinación de cambios de pH, ultrasonidos y calor (RPIPS+US+HT y RPI-PS+HT+US) demostraron los mejores resultados con respecto a la solubilidad y la hidrofobicidad superficial. Estos tratamientos también resultaron en emulsiones O/W estables con tamaños de gotas más pequeños y menor velocidad de desestabilización comparado con el RPI sin tratar y otras muestras. En conclusión, este enfoque combinado demostró un efecto sinérgico en la modificación de las estructuras de las proteínas de arroz, mejorando tanto su solubilidad como sus propiedades emulsionantes. Estos avances tienen el potencial de ampliar significativamente las aplicaciones de los subproductos del arroz en la industria alimentaria, ofreciendo nuevas oportunidades para el desarrollo de productos alimenticios más funcionales y estables. Recent interest in plant proteins, particularly those derived from rice, has arisen due to their notable health benefits, cost-effectiveness, and functionality. These proteins offer a sustainable and renewable alternative to animal-derived proteins, noted for their hypoallergenic, hypocholesterolemic, antioxidant, and anticarcinogenic properties. Additionally, they are rich in essential amino acids and more digestible than other cereal proteins like wheat, corn, and barley.The development of rice protein isolates (RPI) and their use as food ingredients is a significant trend. However, these isolates face limitations due to their high glutelin content, affecting solubility and functional properties, especially when obtained through industrial spray drying, which induces mass aggregation and further reduces solubility. On the other hand, proteins are commonly used in the food industry as emulsifiers due to their ability to form interfacial films in oil-in-water (O/W) emulsions. The effectiveness of these proteins as emulsifiers depends on factors such as solubility and surface hydrophobicity. In this context, this study aimed to enhance the solubility and emulsifying properties of a commercial RPI through combined treatments involving pH changes, ultrasound, and heat. Ten different samples, including individual and combined treatments, were evaluated to optimize conditions that significantly improve solubility for stabilizing O/W emulsions. Results indicated that treatments at neutral pH did not significantly modify the solubility or surface characteristics of RPI due to observed aggregation and low dispersibility under these conditions. However, combined treatments involving pH changes with ultrasound and/or heat showed a significant improvement in protein solubility, inducing changes in surface structure and generating less compact and more dispersed protein aggregates. Specifically, samples treated with combinations of pH changes, ultrasound, and heat (RPI-PS+US+HT and RPI-PS+HT+US) demonstrated the best outcomes regarding solubility and surface hydrophobicity. These treatments also resulted in stable O/W emulsions with smaller droplet sizes and slower destabilization rates compared to untreated RPI and other samples. In conclusion, this combined approach demonstrated a synergistic effect in modifying rice protein structures, enhancing both solubility and emulsifying properties. These advancements have the potential to significantly expand the applications of rice by-products in the food industry, offering new opportunities for developing more functional and stable food products.
