Many students at dietetic training facilities feel uncomfortable with menu planning, and alleviating students’ anxiety about menu planning and supporting the acquisition of practical skills are challenges in menu planning education. This study aimed to clarify the impact of menu planning using generative AI (ChatGPT) on anxiety among students at dietetic training facilities shortly after enrollment. The survey involved gradually incorporating generative AI (ChatGPT) into menu planning, and changes in anxiety levels before and after use, as well as evaluations of generative AI utilization, were assessed through questionnaire surveys and text mining analysis of open-ended responses. Results showed that 78.6 % of students felt anxious before studying, but after using generative AI (ChatGPT), 82.1 % of those who had felt anxious reported that their anxiety had been reduced. Advantages included diverse ideas, guidance on dietetic balance, and time savings. On the other hand, drawbacks included concerns about dependency on generative AI, as well as practical issues such as workflow and costs. While the use of generative AI (ChatGPT) in menu planning education is effective in reducing student anxiety, it is important to cultivate practical judgment and application skills through verification and revision of output. For the future, education that positions generative AI (ChatGPT) as a tool for providing draft proposals with expert intervention is necessary.
