A vida-de-prateleira da erva-mate chimarrão depende do processamento industrial e tipo de embalagem. Uma alteração que a erva-mate sofre durante a estocagem é o crescimento microbiano em função da absorção de umidade. O presente trabalho teve como objetivo a contagem microbiológica e a determinação de umidade e atividade de água, durante um período de 180 dias. Os resultados obtidos para as determinações microbiológicas ficaram abaixo do limites máximos estabelecidos por legislação vigente. O valor médio de umidade foi de 3,63%; atividade de água foi 0,306. Nesse trabalho foi evidenciado a importante função da embalagem na conservação de alimentos desidratados. The shelf-life of the yerba-mate chimarrão depends on the industrial processing and packing type. The alteration that the yerba-mate suffers during the stockpiling is the microbial growth in function of the humidity absorption. The present work had as objective the counting microbiology and the humidity determination and activity of water, during a period of 180 days. The results obtained for the determinations microbiology were below you limit maximum established by effective legislation. The medium value of humidity was of 3.63%; activity of water was 0.306.
