Los radicales libres (RL) y los antioxidantes están siendo ampliamente discutidos en un número creciente de artículos que abordan aspectos clínicos y nutricionales, teniendo en cuenta que a menudo las combinaciones vitamínicas, comúnmente recomendadas en el mundo entero, no ejercen los efectos esperados o por el contrario estos resultan dañinos. El interés acerca del papel de los compuestos polienólicos en las plantas (específicamente los flavonoides) está creciendo rápidamente. Su actividad antioxidante resulta de sus propiedades quelatantes de hierro y secuestradoras de RL, así como de la inhibición de oxidasas. Las modificaciones sobre otras enzimas podrían contribuir también a tal actividad. Esta revisión aborda la actividad antioxidante de los flavonoides a través de diferentes modelos experimentales y la relación estructura-actividad. Se recogen también algunas evidencias de la actividad prooxidante de estos compuestos. Free radicals and antioxidants are widely discussed in the clinical and nutritional literature considering that sometimes the vitamin supplement in the diet as an standard therapy in the whole word either provide no effects or harmful effects. The interest about the role of plant phenolics (especially flavonoids) is growing very fast. The antioxidant activity of flavonoids results from scavenging of free radicals, from the chelation of iron ions and from inhibition of oxidases. Other enzymes modifications seems to be a good reason that contributes to that activity. This review is referred to the antioxidant activity of flavonoids by using differents experimental systems and the structure-activity relationship.
