Con el propósito de caracterizar el efecto inhibitorio contra Listeria monocytogenes, se estudiaron 53 cepas de bacterias ácido lácticas (BAL) aisladas de peces marinos. Sobre la base de la actividad antilisteria se seleccionaron 5 cepas que posteriormente se identificaron por secuenciamiento de ARNr 16S. Dos cepas fueron identificadas como Lactococcus lactis subsp. lactis, dos como Lactococcus lactis subsp. cremoris y la restante como Lactobacillus sakei. En todos los casos, después de la neutralización con NaOH y tratamiento térmico (100 ºC, durante 5 min, 121 ºC durante 5 min) el efecto antagonista de los caldos libres de células se mantuvo activo. La actividad enzimática de lisozima, lipasa y catalasa no inhibió el efecto antimicrobiano. Por el contrario, se observó la supresión completa de la actividad inhibitoria después del tratamiento con tripsina, confirmando por esta manera la naturaleza proteica del agente activo. Las características bioquímicas y fisicoquímicas de los agentes antilisteria producidos por las BAL seleccionadas sugieren que la actividad del antagonista es llevada a cabo por sustancias inhibitorias tipo bacteriocinas (SITB). La estabilidad a los tratamientos térmicos y la actividad antilisteria exhibidas por las SITB estudiadas, las hace útiles para el uso en tecnologías de procesamiento de pescados y en la aplicación para el control en seguridad alimentaria. In order to characterize inhibitory effect against Listeria monocytogenes, 53 strains of lactic acid bacteria (LAB) isolated from marine fish were studied. On the basis of antilisterial activity, 5 strains were selected and further identified by 16S rRNA sequencing. Two strains were identified as Lactococcus lactis subsp. lactis, two as Lactococcus lactis subsp. cremoris and the remaining as Lactobacillus sakei. In all cases, after neutralization with NaOH and heat treatment (100 ºC for 5 min, 121 ºC for 5 min) the antagonist effect of the cell-free broth remained active. The enzimatic activity of lizosime, lipase and catalase did not inhibit the antimicrobial effect. On the other hand, complete suppression of inhibitory activity was observed after treatment with trypsin, confirming by this way the proteinaceous nature of the active agent. The biochemical and physicochemical characteristics of antilisterial agents produced by the selected LAB suggest that the antagonist activity is carried out by bacteriocin-like inhibitory substance (BLIS). The heat treatment stability and antilisterial activity exhibited by the BLIS studied, makes them useful for applications in fish processing technologies and food safety control applications.
