Memoria para optar al título de Ingeniero en Alimentos Teniendo en cuenta el creciente interés por el consumo de alimentos benéficos para la salud humana por parte de la población, los berries adquieren cada vez más protagonismo en este nuevo estilo de vida sana. Dentro de ellos, destaca el maqui (Aristotelia chilensis (Mol.) Stuntz), berry nativo chileno conocido por su alto contenido de compuestos bioactivos. Por otro lado, la industria alimentaria está cada vez más interesada en envases activos. Gracias a esta premisa es que las películas comestibles están siendo estudiadas debido a los beneficios que aportarían en contra del deterioro alimentario. Este trabajo tuvo como objetivo evaluar el potencial tecnológico de componentes antioxidantes obtenidos del liofilizado de maqui y su aplicación en películas comestibles de quitosano. Para ello se realizaron análisis de (i) capacidad antioxidante, (ii) contenido de polifenoles totales (iii) contenido de flavonoides totales (iv) actividad antimicrobiana, tanto al liofilizado como a las películas elaboradas y (v) composición química del liofilizado de maqui. Los resultados obtenidos comprobaron que el liofilizado de maqui posee una alta capacidad antioxidante mediante DPPH, FRAP y FIC de 2,81±0,04 mg ET/g; 25,2±0,38 mg ET/g y 121,12±1,88 μg EDTA/g, respectivamente. Así como también altos contenidos de polifenoles y flavonoides totales de 49,74±0,57 mg EAG/g y 68,04±24,63 mg ER/g, respectivamente. Además, presentó actividad antimicrobiana mediante el método de microdilución contra ocho cepas bacterianas. Los contenidos de materia grasa, cenizas, fibra dietaria total y humedad fueron 0,9±0,07; 1,44±0,004; 30,47±1,29 g/100g p.s. (peso seco) y 0,74 %, respectivamente. En los films, los análisis mostraron correlación entre la concentración de liofilizado incorporado y la cuantificación realizada, encontrándose diferencias estadísticamente significativas (p < 0,05) en todos los análisis excepto en capacidad antioxidante mediante FIC, donde no hubo diferencias estadísticamente significativas (p > 0,05) entre las muestras. En cuanto a la actividad antimicrobiana mediante el método de difusión en disco de agar, los films con liofilizado de maqui fueron más efectivos que el control (quitosano puro), ya que generaron halos de inhibición en siete de las ocho cepas bacterianas testadas, mientras que los films control sólo generaron halos en dos de las ocho cepas. Los resultados mostraron que el liofilizado de maqui podría ser utilizado tanto como ingrediente funcional, así como preservante natural en la industria alimentaria. Por otro lado, los films de quitosano con liofilizado de maqui incorporados podrían ser utilizados como películas activas debido a sus excelentes actividades antioxidantes y antimicrobianas. Among them, one of the recognized is the Maqui (Aristotelia chilensis (Mol.) Stuntz), Chilean native berry known for it’s high bioactive compound content. Besides, in the food industry the interest in active packaging is growing. Thanks to this premise is that edible films are being studied because of their benefits against food spoilage. The aim of this work was to assess the technological potential of antioxidant components obtained by the lyophilization of the maqui and its application to edible chitosan films. With this purpose the analyzes performed were (i) the antioxidant activity, (ii) total phenolic content (iii) total flavonoid content (iv) antimicrobial activity assay of the lyophilized maqui and also about films elaborated and (v) chemical composition of the lyophilized maqui. The results obtained proved that lyophilized maqui has a high antioxidant activity through DPPH, FRAP and FIC of 2,81±0,04 mg TE/g; 25,2±0,38 mg TE/g and 121,12±1,88 μg EDTA/g, respectively. As well as high content of polyphenols and flavonoids of 49,74±0,57 mg EAG/g and 68,04±24,63 mg RE/g, respectively. It also presented antimicrobial activity by the microdilution method against eight bacterial strains. Fat, ash, total dietary fiber and moisture contents of lyophilized maqui were 0,9±0,07; 1,44±0,004; 30,47±1,29 g/100g d.m. (dry matter) and 0,74 %, respectively. About the films, chemical analysis showed correlation between the concentration of incorporated lyophilized and the quantification performed, with statistically significant differences (p < 0,05) in every analysis except antioxidant capacity by FIC, where there were no statistically significant differences (p > 0,05) in the film samples. Concerning the antimicrobial activity by disc diffusion method, the films with incorporated lyophilized maqui were more effective than the control (pure chitosan), because inhibition halos generated in seven of the eight bacterial strains tested. While control films generated halos in only two of the eight strains. Results showed that lyophilized maqui could be used both as a functional ingredient and a natural preservative in the food industry. Furthermore, chitosan films with incorporated lyophilized maqui could be used as active films due to their excellent antioxidant and antimicrobial activities
