This resource contains raw experimental data and R scripts generated during the evaluation of protective formulations for freeze-drying preservation of Latilactobacillus sakei subsp. sakei ACU-2, an autochthonous meat starter culture. The dataset includes measurements related to survival after freeze-drying, water activity, storage stability, and retention of acidifying activity under different protective formulations and storage conditions.
